Quick and Easy Paleo Lemon Asparagus Recipe

Ingredients

  • 2.5 tbsp extra virgin olive oil
  • 1 bunch asparagus
  • ¼ tsp sea salt
  • 2 tsp freshly squeezed lemon juice
  • 2 cloves garlic, sliced

Instructions

  • Prepare the asparagus by cutting off the ends.
  • Heat the olive oil in a large pan on medium to medium-high heat.
  • Add the asparagus to the pan and sprinkle with salt
  • Cook the asparagus for 3.5 minutes, mixing occasionally. Note: cooking times will vary a bit based on the thickness of the asparagus. Reduce the cooking time for thinner pieces.
  • Add lemon juice and garlic cloves
  • Continue cooking for 3-5 more minutes or until tender

Notes

*If you don't have garlic cloves, try garlic powder. Just use 1/4 tsp of garlic powder in place of the 2 garlic cloves. Just make sure it's Paleo-approved (and doesn't have additives) if you're following a Paleo diet.
