Leftover Turkey Salad

This paleo-friendly leftover turkey and apple salad is a healthy option after indulging in Thanksgiving holiday food.

Ingredients

  • Bed of Arugala
  • 2-3 oz Cooked Turkey, shredded
  • 1 medium Apple, cored and diced
  • ¼ cup Cranberries
  • ¼ cup Walnuts, cut into pieces
  • 1.5 tbsp Pomegranate Juice
  • 1 tbsp Stone Ground Mustard
  • 1 tbsp Maple Syrup

Instructions

  • Arrange the lettuce, turkey, pieces of apple, cranberries, and walnuts on the salad.
  • Mix the pomegranate juice, mustard, and maple syrup in a small dish. Drizzle the dressing over the salad as desired.

Notes

If you do not have stone-ground mustard, other mustards will do. Just make sure to always look out for added ingredients if you are following a paleo diet.
