This paleo-friendly leftover turkey and apple salad is a healthy option after indulging in Thanksgiving holiday food.

Ingredients
Bed of Arugala
2-3ozCooked Turkey, shredded
1mediumApple, cored and diced
¼cupCranberries
¼cupWalnuts, cut into pieces
1.5tbspPomegranate Juice
1tbspStone Ground Mustard
1tbspMaple Syrup
Instructions
Arrange the lettuce, turkey, pieces of apple, cranberries, and walnuts on the salad.
Mix the pomegranate juice, mustard, and maple syrup in a small dish. Drizzle the dressing over the salad as desired.
Notes
If you do not have stone-ground mustard, other mustards will do. Just make sure to always look out for added ingredients if you are following a paleo diet.
